These playful designs will give you an understanding of what to expect when using different icing consistencies to layer and add dimension. We’ll jump into colors, patterns, and designs to discover how they work together to bring your creative visions to life.

Each whimsical cookie showcases a different background style on a large 6 x 3 ½” cookie canvas. We want to be “curiouser and curiouser” about royal icing and how it works, and we will uncover new ways to create by combining elements. All these techniques are versatile and fun to use for any cookie set.

In this fast-paced, 4-hour class, we will learn how to:
  • Use different royal icing consistencies to create layers
  • Pipe fine details and line work
  • Create realistic wood grain with royal icing
  • Paint fondant and gum paste flowers and frames
  • Add depth with powdered food colors

Have you ever wanted to paint florals on a cookie but just didn’t know where to start? Watercolor can be very intimidating, especially if you don’t view yourself as a painter. Once you learn the basics, however, you’ll find it isn’t nearly as hard as it looks.

In this class I will help you build a solid watercolor foundation so you can take what you learn and implement it immediately in your regular cookie orders. Together, we will create a watercolor workbook that you can take home and reference for future watercolor projects. You will get to know your watercolor brush and learn the different strokes to build a variety of loose watercolor flowers.

You will also have the opportunity to experiment with different watercolor techniques and gain the knowledge to choose the best option for your needs. (Water vs. Everclear, gel food coloring vs. powder etc.) Along with watercolor, you will learn to pipe a frame with gold royal icing and use a piping tip to create a realistic bow. All skill levels are welcome!

Let me share all of my color secrets with you! In this class we’ll unravel the mystery of the color wheel. There is NO color you can’t mix! We’ll talk about the science of color and learn the art of mixing the perfect shade, with tips specific to mixing icing! You will be making your own color wheel where you’ll mix every shade yourself. We’ll also have a color competition at the end - with prizes!

Texas BBQ (Tues AM)

It’s a Texas BBQ Cookie Class, y’all! In this class, we’ll be making cookie-versions of favorite foods on any good Texas BBQ menu, including sliced smoked brisket (with smoke ring and bark), baked beans, white bread, pickles, onions, and banana pudding. All of the mouth-watering designs are made with royal icing, wafer paper, and a few special ingredients. There are more Texas-sized techniques in this class than you can shake a stick at. Participants should know their way around royal icing and be able to pipe and flood like it’s not their first rodeo.

Hi, I am Tammy Colitti, the designing face behind 2 Ts Stencils. I started making decorated sugar cookies more than 16 years ago for family and friends. The creative side of me started designing stencils to make simple cookies and transform them into works of sugar art.

Do you struggle with getting the right consistency when decorating your own cookies at home? Do you wonder how to get that beautiful, shiny, and puffy icing each time you decorate? Do you wonder how to achieve puffy layers of icing on top of one another without having it crater on you? Do you struggle with puffy writing? Having all the cookie tools is not always beneficial if you don’t have the fundamentals of icing consistency and piping. Whether you are brand new to cookies or have been decorating for 10+ years, this class will help you progress towards mastering the essentials of icing consistency and decorating. We will achieve this through decorating a baby themed set of cookies that you can use over and over again for your own custom sets. Cozy Fall Florals (Tues AM)

Get ready for fall with this cozy floral class. If you’re hoping to learn or master royal icing flowers, this class is a perfect add on. Join me to decorate this huge 9” book cookie. In this class we’ll spend the class focusing on piping 3-D royal icing flowers. We’ll learn about floral consistency, bagging the floral icing, and what floral tip to use.

In this class we’ll pipe multiple blooms of 5 different floral varieties: Dahlias, Ruffled blooms, Garden roses, Spray roses, and cosmos. We’ll also cover how to adjust and manipulate these same techniques to pipe these blooms for your own cookie sets at home.

While we wait for our flowers to dry, we’ll add details to our book stack (which will be base flooded for you). We’ll add painted texture, pages, and spine details. Then we’ll pipe on puffy leaves and place our flowers.

Have you ever wanted to design and make your own stencils? Have you been intrigued by “Silkscreen Stencils”? Then this is your class! Join me to learn the basics of Silkscreen Stencil design, construction, and use.

Class will be a mix of lecture and hands-on instruction. You will decorate 6 cookies as shown. Cookies will be pre-flooded as the icing needs to be completely dry.

The first part of the class will be lecture style. I will walk you through the basics of stencil design using Silhouette Studio** design software. We will explore the many features of the program, then use those skills to design cookie stencils. A computer is not required. I will provide a detailed handout that walks through the process step by step.

After lecturing, each student will weed, assemble and press 4 stencils which we will use to decorate the cookies as shown. We will discuss optimal icing consistency as well as tips and techniques to ensure success at home.

It's time to “up your cookie game” by making flawless text, logo, and graphic Stencils to WOW your customers!

Perfecting Presales (Tues AM)

Prerequisite: Minimal skills are required, however, this is a fast-paced class therefore, basic outlining and flooding skills are required, and basic airbrush knowledge is encouraged but not required.

Description: Do you struggle with your holiday presales? Are you pulling all-nighters just to finish your orders in time? This class will help you kick off the holiday season with confidence and a plan! This class is a combination of lecture and decorating. You will learn tips and tricks to ace your holiday season, as well as decorate 6 cookies (2 Halloween, 2 Thanksgiving, and 2 Christmas). This class will be a fast-paced jam-packed class! We are not just decorating cookies (with only two colors of icing, how cool!), you will also get a full-blown course on how to be successful in presales. So, have your piping and notes-taking hand ready!

What will you learn to prepare for presales? As an Industrial Engineer, efficiency is my jam! I've had over 12 years of cookie presale experience and want to share all the tips and tricks I have learned throughout the years. We will run through an entire presale timeline going over every step of the process. You will learn what designs are best to make, the basics of pricing your cookies, streamlining packaging, and so much more!

What cookie decorating skills will you learn? The 6 cookies you will make are all made with only white and black icing. This will give you a unique perspective on the different color methods to implement in your cookie designs. We will cover icing transfers, airbrushing, watercolor, dry-dusting, and more!

Mardi Gras Cookie Class (Tues AM)

Due to time constraints, some elements of the cookie will be pre-prepared, but we'll work together to create the feathers, strings, and intricate color gradients that make this mask truly spectacular. In this class students will learn:
  • Hands-on experience with mixing your own royal icing floral and leaf consistencies. This helps to ensure you can be successful with floral projects at home

Have you ever wanted to paint florals on a cookie but just didn’t know where to start? Watercolor can be very intimidating, especially if you don’t view yourself as a painter. Once you learn the basics, however, you’ll find it isn’t nearly as hard as it looks.

In this class I will help you build a solid watercolor foundation so you can take what you learn and implement it immediately in your regular cookie orders. Together, we will create a watercolor workbook that you can take home and reference for future watercolor projects. You will get to know your watercolor brush and learn the different strokes to build a variety of loose watercolor flowers.

You will also have the opportunity to experiment with different watercolor techniques and gain the knowledge to choose the best option for your needs. All of the mouth-watering designs are made with royal icing, wafer paper, and a few special ingredients. There are more Texas-sized techniques in this class than you can shake a stick at. Get ready for fall with this cozy floral class. If you’re hoping to learn or master royal icing flowers, this class is a perfect add on. Join me to decorate this huge 9” book cookie. In this class we’ll spend the class focusing on piping 3-D royal icing flowers. We’ll learn about floral consistency, bagging the floral icing, and what floral tip to use.

Have you ever wanted to design and make your own stencils? Have you been intrigued by “Silkscreen Stencils”? Then this is your class! Join me to learn the basics of Silkscreen Stencil design, construction, and use.

Class will be a mix of lecture and hands-on instruction. You will decorate 6 cookies as shown. Cookies will be pre-flooded as the icing needs to be completely dry.

The first part of the class will be lecture style. I will walk you through the basics of stencil design using Silhouette Studio** design software. We will explore the many features of the program, then use those skills to design cookie stencils. A computer is not required. I will provide a detailed handout that walks through the process step by step.

After lecturing, each student will weed, assemble and press 4 stencils which we will use to decorate the cookies as shown. We will discuss optimal icing consistency as well as tips and techniques to ensure success at home.

We are not just decorating cookies (with only two colors of icing, how cool!), you will also get a full-blown course on how to be successful in presales. So, have your piping and notes-taking hand ready!

What will you learn to prepare for presales? As an Industrial Engineer, efficiency is my jam! I've had over 12 years of cookie presale experience and want to share all the tips and tricks I have learned throughout the years. We will run through an entire presale timeline going over every step of the process. No metal icing tip? No problem! Tipless bags have taken the cookie world by storm. Let’s learn how to cut them in a variety of ways to achieve different piped icing looks, all WITHOUT metal tips! In this class, you will learn how to cut SIX different icing bag “tips” on tipless bags, some of which are completely unique and have no known metal tip equivalent. We’ll be using the various tip styles to create a beautiful winter poinsettia cookie and holiday stocking cookie. The cookie designs will be adorned with a variety of florals, foliage, pinecones, and a double ruffled ribbon- all made WITHOUT metal icing tips! Video and live instruction will help demonstrate hand/wrist movement and pressure piping, and templates will assist in achieving intricate cuts on the tipless icing bags. Hi, I am Tammy Colitti, the designing face behind 2 Ts Stencils. I started making decorated sugar cookies more than 16 years ago for family and friends. The creative side of me started designing stencils to make simple cookies and transform them into works of sugar art.

I have shared my love for cookies at the last 7 CookieCons and am excited to teach again in Texas. I have also instructed at the San Diego Cake Show, ICES National Convention, and many Texas ICES Days of Sharing, I am also the Coordinator behind Cookie RoundUP Cookie Retreats.

Classic, elegant, and dainty florals paired with a French inspired Pastry shop. This class is a perfect add on if you’re hoping to learn or master royal icing flowers. In this class, we’ll focus on florals and spend the drying time detailing and watercoloring this 9” pastry shop cookie.

We’ll pipe multiple blooms of 5 different floral varieties: Large Garden Roses, peonies, spray roses, anemones, and hydrangeas. We’ll also cover how to adjust and manipulate these same techniques to pipe these blooms for your own cookie sets at home.

While the flowers are drying, we’ll add some watercolor details to the cookie and transfer details. Then we’ll pipe on puffy leaves before we place the flowers onto the cookie.

Have you ever wanted to design and make your own stencils? Have you been intrigued by “Silkscreen Stencils”? Then this is your class! Join me to learn the basics of Silkscreen Stencil design, construction, and use.

Class will be a mix of lecture and hands-on instruction. You will decorate 6 cookies as shown. Cookies will be pre-flooded as the icing needs to be completely dry.

The first part of the class will be lecture style. I will walk you through the basics of stencil design using Silhouette Studio** design software. We will explore the many features of the program, then use those skills to design cookie stencils. A computer is not required. I will provide a detailed handout that walks through the process step by step.

After lecturing, each student will weed, assemble and press 4 stencils which we will use to decorate the cookies as shown. We will discuss optimal icing consistency as well as tips and techniques to ensure success at home.

Description: Do you struggle with your holiday presales? Are you pulling all-nighters just to finish your orders in time? This class will help you kick off the holiday season with confidence and a plan! This class is a combination of lecture and decorating. You will learn tips and tricks to ace your holiday season, as well as decorate 6 cookies (2 Halloween, 2 Thanksgiving, and 2 Christmas). This class will be a fast-paced jam-packed class! We are not just decorating cookies (with only two colors of icing, how cool!), you will also get a full-blown course on how to be successful in presales. So, have your piping and notes-taking hand ready!

What will you learn to prepare for presales? As an Industrial Engineer, efficiency is my jam! I've had over 12 years of cookie presale experience and want to share all the tips and tricks I have learned throughout the years. We will run through an entire presale timeline going over every step of the process. You will learn what designs are best to make, the basics of pricing your cookies, streamlining packaging, and so much more!

What cookie decorating skills will you learn? The 6 cookies you will make are all made with only white and black icing. This will give you a unique perspective on the different color methods to implement in your cookie designs. We will cover icing transfers, airbrushing, watercolor, dry-dusting, and more!

No metal icing tip? No problem! Tipless bags have taken the cookie world by storm. Let’s learn how to cut them in a variety of ways to achieve different piped icing looks, all WITHOUT metal tips! In this class, you will learn how to cut SIX different icing bag “tips” on tipless bags, some of which are completely unique and have no known metal tip equivalent. We’ll be using the various tip styles to create a beautiful winter poinsettia cookie and holiday stocking cookie. The cookie designs will be adorned with a variety of florals, foliage, pinecones, and a double ruffled ribbon- all made WITHOUT metal icing tips! Video and live instruction will help demonstrate hand/wrist movement and pressure piping, and templates will assist in achieving intricate cuts on the tipless icing bags. Classic, elegant, and dainty florals paired with a French inspired Pastry shop. This class is a perfect add on if you’re hoping to learn or master royal icing flowers. In this class, we’ll focus on florals and spend the drying time detailing and watercoloring this 9” pastry shop cookie.

We’ll pipe multiple blooms of 5 different floral varieties: Large Garden Roses, peonies, spray roses, anemones, and hydrangeas. We’ll also cover how to adjust and manipulate these same techniques to pipe these blooms for your own cookie sets at home.

While the flowers are drying, we’ll add some watercolor details to the cookie and transfer details. Then we’ll pipe on puffy leaves before we place the flowers onto the cookie.

After lecturing, each student will weed, assemble and press 4 stencils which we will use to decorate the cookies as shown. We will discuss optimal icing consistency as well as tips and techniques to ensure success at home.

What will you learn to prepare for presales? As an Industrial Engineer, efficiency is my jam! I've had over 12 years of cookie presale experience and want to share all the tips and tricks I have learned throughout the years.
